Lamb Lentils Rice with Spinach

Ingredients
  

Lamb and Marinade

  • 500 g boneless lamb, cubed
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp paprika

Lentils and Rice

  • 1 cup dried green or brown lentils
  • 1.5 cups Basmati or Jasmine rice
  • 4 cups chicken or vegetable broth

Vegetables and Seasoning

  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups fresh spinach
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • salt and black pepper to taste

Instructions
 

  • Rinse and pat dry the lamb. Marinate with olive oil, lemon juice, cumin, coriander, paprika, salt, and pepper. Let it rest for at least 30 minutes.
  • Heat a large pot over medium-high heat and sear the lamb pieces until browned on all sides. Lower the heat, cover, and let it simmer until tender.
  • Rinse the lentils thoroughly and cook in a pot with a 3:1 water-to-lentil ratio. Bring to a boil, reduce to a simmer, and cook for 20-30 minutes until tender.
  • Rinse the rice under cold water until the water runs clear. In a pot, combine rice with 1.5 cups of broth and a pinch of salt. Bring to a boil, cover, and reduce to a low simmer for 15-18 minutes.
  • In a pan, sauté onions, garlic, and ginger until fragrant. Add turmeric and chili powder and cook for another minute.
  • Stir in the cooked lentils and spinach, cooking until spinach wilts.
  • Combine the lamb, lentil mixture, and rice in a serving dish. Drizzle with olive oil or lemon juice and serve warm.

Notes

This dish can be customized with additional vegetables or different spices. It pairs well with fresh herbs like cilantro or parsley for an extra burst of flavor.
