Ingredients
  

  • Potatoes
  • 2 medium potatoes peeled and grated
  • 1/4 cup wheat flour
  • 2 large eggs
  • 1/4 cup onions chopped
  • 1/4 cup pimientos chopped
  • 1 tsp salt
  • 1 cup processed cheddar cheese
  • Vegetable oil
  • for frying

Instructions
 

  • Peel and grate the potatoes. Place them in a clean towel and squeeze out excess moisture.
  • In a large bowl, combine the grated potatoes, wheat flour, eggs, chopped onions, pimientos, and salt. Mix to form a sticky dough-like consistency.
  • Fold in the processed cheddar cheese into the mixture.
  • Shape the mixture into small tot-sized balls using your hands or a spoon.
  • Heat vegetable oil in a deep fryer or large pot over medium heat. Fry the tots in batches for about 3-4 minutes or until golden brown.
  • Use a slotted spoon to transfer the tots to a paper towel-lined plate to drain excess oil.

Notes

For extra cheesy goodness, feel free to add more cheddar or a combination of cheeses. You can also bake the tots at 400°F for 20-25 minutes for a healthier option.
